What is a flammekueche?!

Unlike a typical thin-crust pizza, Flammekueche (also known as Flammkuchen in German or TTarte Flambée in French) is a traditional yeast free flatbread from the Alsace region, where France meets Germany.

This rustic dish has been enjoyed for generations, baked quickly in wood-fired ovens until crisp, light, and golden. Traditionally, it’s topped with a base of crème fraîche, finely sliced onions, and smoky lardons though today you’ll also find endless modern variations with fresh, high-quality toppings.

What makes Flammekueche special? It’s lighter than pizza, crispier than flatbread, and bursting with flavour. Unlike pre-rolled doughs you’ll find in the UK, an authentic Flammkuchen base is delicate, paper-thin, and designed to showcase its toppings rather than overwhelm them. The result is a dish that feels indulgent but never heavy.

Whether you know it as Flammekueche, Flammkuchen, or Tarte Flambée, one thing’s certain: once you’ve tried it, you’ll never think of “thin crust” the same way again.
